ITALIAN BEEF STUFFED PEPPERS

  • 4 Red or Green Bell Peppers
  • 1 Pound of Vienna Beef Italian Beef (insert link), follow package instructions for warming and cut into smaller pieces.
  • 1 Cup prepared white or brown rice, cooked
  • 1 Cup yellow onion, chopped
  • 1- 14 ounce can petite diced tomatoes, undrained
  • 1 Teaspoon Italian Seasonings
  • 1 Teaspoon unsalted butter
  • ½ Teaspoon red pepper flakes (optional)

You will need:

  • Mixing Bowl
  • Sauté Pan
  • 8 in. x 8 in. Baking Dish
  • Aluminum Foil
  • Knife

Servings: About 4 Servings
Here’s what you’ll do:
Step 1. Preheat Oven to 425° Degrees
Step 2. Prep Bell Peppers
Using a sharp knife, carefully slice the top of each pepper off and set aside***. Remove seeds and membranes to create a “bowl” for your Italian Beef mixture.
*** Don’t throw away the tops!  They are needed for cooking and presentation.
Step 3. Sauté
In a sauté pan set to medium heat, melt butter and add the chopped onions.  Cook until just translucent, about 3-5 minutes.  Remove from heat.
Step 4. Mix Filling
In a large mixing bowl, combine prepared Vienna® Beef Italian Beef, cooked rice, sautéed onion, tomatoes, Italian seasonings, and red peppers flakes (optional).
Step 5.  Stuff and Bake!
Evenly distribute the filling into each pepper.  Cover each with its own top and place in baking dish.  Add ½ cup water to a baking dish so the peppers can steam.  Cover with foil and bake for 30 minutes, or until the peppers are soft and filling is hot.
Step 6. Serve
Enjoy!
