Jalapeño Pastrami Poppers &  Irish Quesadillas
At Vienna Beef we hand trim all of our briskets to bring you the best product possible.  Freshly made Corned Beef and sliced Pastrami are always a great idea, but we are going to let you in on a secret…. we love leftovers. There are so many ways to get creative with leftover corned beef and pastrami. They make an amazing sandwich, or you can get more inventive with some of these recipes below!

JALAPEÑO PASTRAMI POPPERS


  •  6 Whole jalapeños
  •  4 Ounces cream cheese, softened
  •  ½ Cup cheddar cheese, shredded
  •  1 Clove mined fresh garlic, minced
  •  2 Tablespoons Vienna Beef yellow mustard
  •  8 Ounces Vienna Beef Pastrami, chopped fine
  •  3 Slices of cooked bacon, crumbled
  •  Salt, to taste

You will need:

  • 13”x 9” baking pan
  • Knife
  • Mixing bowl and mixing spoon
  • Serving platter 

Servings: Makes 12 Jalapeño Poppers
Here’s what you’ll do:
Step 1. Preheat Oven to 400°F
Step 2. Prepare Jalapeños
With a sharp knife, carefully slice each jalapeño lengthwise and remove seeds. Place in the baking pan and bake for 8 minutes to soften.  Let cool completely.
Step 3. Prepare Filling
In a mixing bowl combine cream cheese, cheddar cheese, garlic, yellow mustard, chopped Vienna Beef pastrami, garlic and salt to taste.
    
Step 4. Assemble Poppers
Evenly spoon filling into jalapeño halves.  Press crumbled bacon on top of each piece.  Bake for 15 minutes.  Remove from oven, cool for 5 minutes before serving.
Step 4. Serve

IRISH QUESADILLAS



 

  • 8 – 8-inch flour tortillas
  • 1 Cup mozzarella cheese, shredded
  • 16 Slices of Swiss cheese
  • 3 Cups Vienna Beef corned beef, chopped
  • 1 Cup Vienna Beef Sauerkraut, drained well
  • Thousand Island Dressing

You will need:

  • Large non-stick skillet or griddleSpatula

Servings:
About 8 Quesadillas
Here’s what you’ll do:
Step 1. Heat to medium heat
Place a tortilla in the skillet or on the griddle and add 2 slices of Swiss cheese. Evenly distribute the Vienna Beef corned beef and Vienna Beef Sauerkraut and sprinkle some of the mozzarella on top. Fold tortilla in half with a spatula and let brown 1-2 minutes.
Step 3. Fold, brown & repeat!
Flip the quesadilla and brown the other side for 1-2 minutes or until the cheese is melted. Repeat for the remaining 7 quesadillas.
Step 4. Serve
Cut each quesadilla into thirds and serve with a side of Thousand Island for dipping. Enjoy!
