Easy, Crowd Pleasing Meal Ideas For The New Year

As we enter 2023, everyone (including us) is gearing up for their best year yet. Read on to discover some of our favorite easy and crowd pleasing meal ideas for you and your family.

Spicy Roasted Sausage & Veggies

It doesn’t get much easier than this one pan meal! With just a few minutes of prep, you’ll have a healthy and delicious meal on the table in less than an hour to help you crush your 2023 health goals.

Ingredients:

  • 12 ounces of Vienna Beef Polish Sausage, chopped
  • 1 pound of potatoes, peeled and chopped
  • 1 medium onion, chopped
  • 1 sweet red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon olive oil
  • Creole seasoning, salt, and black pepper to taste

Directions:

  • Preheat your oven to 400°. 
  • In a large bowl, combine potatoes, Vienna Beef Polish Sausage, onion, red pepper, green pepper and pepper rings. Mix oil and seasonings and add to the mixture.
  • Add everything to a baking pan coated with cooking spray. Roast for 30-35 minutes, tossing occasionally.

Spicy Rice Casserole

Next time you’re craving a bowl of comfort food, try this recipe! With minimal prep, tons of veggies and the perfect spice, this is sure to become a weeknight staple in your home.

Ingredients:

  • 28 ounces of Vienna Beef Fire Dogs, chopped
  • 1 cup uncooked long grain rice
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 28 ounce can of crushed tomatoes
  • 1 cup chicken broth
  • Salt, black pepper, and cayenne pepper to taste

Directions:

  • Preheat your oven to 350°.
  • In an oven-safe vessel, brown your Vienna Beef Fire Dogs medium-high heat. Add rice, onion, garlic, peppers, and saute for 5 minus, stirring occasionally.
  • Add in tomatoes, chicken broth, and spices.
  • Bake in the preheated oven for 1 hour or until rice is tender and most of the liquid is absorbed.

Potato & Sausage Hash

This easy, one skillet recipe is perfect for any meal of the day (and child approved!) Add a fried egg for even more protein and flavor!

Ingredients:

  • 16 ounces of Vienna Beef Polish Sausage
  • 1 pound potatoes, peeled and chopped
  • 1 small onion, diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Paprika, salt, and black pepper to taste

Directions:

  • Melt butter in a large skillet. Add in potatoes and cook for 7-10 minutes.
  • Add onion and Vienna Beef Polish Sausage and cook for 3 minutes.
  • Add peppers, garlic, and seasonings. Reduce the heat and cook uncovered for 10 minutes, or until potatoes are tender.
  • Optional: top with chopped parsley and a fried egg.
